Peanut Butter Cookies

Ingredients
- 12 tablespoons unsalted butter, at room temperature
- 1 cup sugar
- 1 1⁄4 cups peanut butter (smooth or chunky)
- 1 egg
- 1⁄2 teaspoon vanilla
- 1 1⁄2 cups all-purpose flour
- 1⁄2 teaspoon baking soda
Directions
- Preheat the oven to 350°F Line 2 baking sheets with parchment paper.
- In a large mixing bowl, cream the butter with the sugar. Beat in the peanut butter, egg and vanilla.
- Sift together the flour and baking soda. Add to the cookie dough and mix well.
- Roll the dough into golf ball-sized balls. Place them about 2-inches apart on the prepared baking sheets. Place another sheet of parchment paper on top and press lightly to flatten the cookies. Remove the top sheet of parchment paper.
- Bake the cookies for 10-15 minutes, or until the edges begin to brown. Carefully remove and let cool on a wire rack.
