Peanut Butter Bars

This recipe comes from Cindy Porter, and is the absolute best. They remind me of the peanut butter bars served in the lunchroom cafeteria, only better. Show more

Yields: 24-36 bars

Ingredients

  • 34 cup butter
  • 34 cup brown sugar
  • 34 cup sugar
  • 1 34 cups peanut butter (divided, save 1 cup to frost the bars)
  • 2  eggs
  • 12 teaspoon vanilla
  • 1 12 cups flour
  • 1 12 cups oats
  • 34 teaspoon baking soda
  • 12 teaspoon salt
  • 2 -3  cups  chocolate frosting (store bought is fine or make your own chocolate fudge icing)

Directions

  1. Cream butter, sugars, eggs, vanilla, and 3/4 cup of peanut butter.
  2. Add remaining ingredients (except remaining peanut butter and chocolate frosting).
  3. Spread dough on a cookie sheet.
  4. Bake at 350 degrees for 10-12 minutes (do NOT overcook).
  5. Whip 1 cup of peanut butter (I like to add a few tablespoons of powdered sugar) and spread on the crust.
  6. Frost with chocolate frosting (I like to make my own chocolate fudge icing, but she always just uses chocolate frosting from the store).
