Peanut Brittle

Use fresh peanut and sweet butter for the best results.

  1. Mix baking soda, teaspoon water and vanilla. Set a side.
  2. Mix sugar, 1/2 cup water and corn syrup in a heavy pot. Stirring constantly.
  3. Cook over medium heat unitl it reaches 240* on candy thermometer.
  4. Add butter and nuts.
  5. Cook until mixture reaches 290* on candy thermometer.
  6. Immediatly turn off heat.
  7. Quickly stir in baking soda mixture until light and fluffy.
  8. Pour onto greased half sheet pan, spray with cooking spray.
  9. Roll with a marble rolling pin until about 1/4 inch thick.
  10. Cool completely: at least 1 hour.
  11. Break into small pieces and store in an air tight container.
  12. Makes about 3 lbs.
