Peanut Brittle

Ingredients
- 3 cups sugar
- 1 cup light corn syrup
- 1⁄2 cup water
- 1 teaspoon water
- 4 1⁄2 cups dry roasted salted peanuts
- 4 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
Directions
- Mix baking soda, teaspoon water and vanilla. Set a side.
- Mix sugar, 1/2 cup water and corn syrup in a heavy pot. Stirring constantly.
- Cook over medium heat unitl it reaches 240* on candy thermometer.
- Add butter and nuts.
- Cook until mixture reaches 290* on candy thermometer.
- Immediatly turn off heat.
- Quickly stir in baking soda mixture until light and fluffy.
- Pour onto greased half sheet pan, spray with cooking spray.
- Roll with a marble rolling pin until about 1/4 inch thick.
- Cool completely: at least 1 hour.
- Break into small pieces and store in an air tight container.
- Makes about 3 lbs.
