Peaches Flambees

a quick dessert for unexpected guests, allow 1 peach per person

Ingredients

  • 2  peaches, skinned, halved and stoned
  • 2  teaspoons butter
  • 2  teaspoons brown sugar
  • 2  tablespoons brandy

Directions

  1. fill the half peaches with butter and brown sugar, place in an oven proof dish, cover and cook in a moderate oven for 15 minutes.
  2. just before serving heat the brandy in a saucepan and pour over the peaches.
  3. light with a match, and present to your guests whilst still alight.
