Peaches and Cream Dessert

Uses vanilla wafers, marshmallows, and whipping cream. Very old recipe. I think you could use Cool whip and Marshmallow fluff with this recipe. No cooking. Good for summer dessert; needs chill time in refrigerator. Show more

Ingredients

  • 1 12 cups  vanilla wafers, about 38, made into crumbs
  • 14 cup butter, melted
  • 12 lb marshmallows, about 44
  • 2  tablespoons  orange juice
  • 2  tablespoons lemon juice
  • 1 12 cups  peaches, chopped fresh
  • 1  cup  whipping cream, beaten stiff

Directions

  1. Mix vanilla wafer crumbs with melted butter.
  2. Pat half of this mixture into a 9x9 cake pan.
  3. Heat marshmallows; add orange juice and lemon juice.
  4. Heat over low heat (double boiler would be best) until partially thickened.
  5. Fold in peaches and cook a while longer; cool.
  6. Fold in whipped cream; pour over wafers.
  7. Sprinkle reserved crumbs over top.
  8. Chill.
