Peach Salsa

Ingredients
- 1 lb peach, peeled and diced
- 1⁄4 cup green onion, finely chopped
- 1 tablespoon fresh lemon juice
- 1 green bell pepper, finely diced
- 2 teaspoons mint leaves, finely chopped
- 3 teaspoons chili peppers, finely chopped
- 1⁄4 teaspoon ground ginger
Directions
- Mix well in mixing bowl or blend all ingredients in a blender for a smoother salsa.
- Refrigerate for 24 hours.
- This salsa freezes well.
