Peach Salsa

Ingredients

• 1  lb  peach, peeled and diced
• 1⁄4 cup green onion, finely chopped
• 1  tablespoon fresh lemon juice
• 1  green bell pepper, finely diced
• 2  teaspoons mint leaves, finely chopped
• 3  teaspoons chili peppers, finely chopped
• 1⁄4 teaspoon ground ginger

Directions

1. Mix well in mixing bowl or blend all ingredients in a blender for a smoother salsa.
2. Refrigerate for 24 hours.
3. This salsa freezes well.
