Peach Muffins

Ingredients
- 1 large egg
- 1 cup milk
- 4 tablespoons butter, melted
- 2⁄3 cup sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon cinnamon
- 1 teaspoon fresh lemon juice
- 1⁄4 teaspoon vanilla
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 peaches, pitted and chopped but not peeled (about 1 1/2 cups)
Directions
- Preheat oven to 350°F
- Beat egg in a large mixing bowl.
- Stir in milk, butter, sugar, salt, cinnamon, lemon juice and vanilla.
- Sift flour and baking powder together.
- Stir flour mixture into egg mixture, mixing only until just blended.
- Gently fold in the peaches.
- Spoon into greased muffin cups, filling each only 3/4 full.
- Bake 20 minutes.
