Peach Muffins

  1. In a mixing bowl, cream butter and sugar.
  2. Add egg, sour cream and vanilla and mix well.
  3. Sift the flour and baking powder together; stir into creamed mixture until just moistened.
  4. Fold in the peaches and pecans if using.
  5. Fill greased muffin cups three-quarters full.
  6. Bake at 400 degrees fahrenheit for 20 to 25 minutes.
  7. Cool in pan 10 minutes.
  8. Remove to wire rack to finish cooling.
