Peach Lemon Cup

Ingredients
- 2 tablespoons butter
- 1⁄2 cup sugar
- 3 tablespoons lemon juice
- 1⁄4 teaspoon lemon peel
- 1⁄4 cup flour
- 1⁄4 teaspoon salt
- 2 eggs
- 2⁄3 cup milk
- 1 cup canned peaches
Directions
- cream butter and sugar
- add lemon juice and finely grated lemon rindblend in sifted flour and salt
- separate eggs
- beat egg yolk slightly
- combine with milk
- stir into creamed mixture
- beat egg whites til stiff
- fold into batter add diced drained canned peaches pour into 6 greased custard cups.
- set in pan of hot water bake 350 degrees for 40 minutes
- let cool
- turn out.
