Peach Honey Chamomile Popsicles

Found in Parade. Cook time is freeze time. You can also leave out the tea if you like.

Serves: 10

Ingredients

  • 4  yellow  peaches, ripe
  • 2  white peaches, ripe
  • 2  chamomile tea bags
  • 14 cup honey
  • 12  small  lemon, juice of
  • 1  pinch kosher salt

Directions

  1. 1. Clean, halve, and pit 2/3 of peaches.
  2. 2. Puree them with skins until nearly smooth.
  3. 3. Stir in honey, lemon juice, salt, 2 tbs tea leaves into pureed peaches.
  4. 4. Coarsely chop remaining peaches and combine in pureed mixture.
  5. 5. Add more honey, if desired. Make pops a tad sweeter than usual-they loose some sweetness after freezing.
  6. 6. Pour into popsicle molds or 3oz. Dixie cups with a wooden stick.
  7. 7. Freeze and enjoy.
