PEACH CRUMB CAKE

Ingredients
- 4 ounces butter
- 1⁄3 cup sugar
- 1⁄3 cup brown sugar
- 3 eggs, room temperature
- 1 teaspoon vanilla
- 1 3⁄4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup sour cream
- 2 large peaches
- 3 tablespoons flour
- 1⁄2 teaspoon cinnamon
- 1 cup oatmeal
- 1⁄4 cup flour
- 1⁄4 cup brown sugar
- 1⁄2 teaspoon cinnamon
- 3 tablespoons butter, cold
- 1⁄2 cup walnuts or 1⁄2 cup pecans, chopped
Directions
- Preheat oven to 350ˆ. Spray 13 x9 pan and line with parchment paper, set aside.
- Cream butter and sugars until light and fluffy.
- Add eggs, one at a time.
- Add vanilla.
- Sift flour, baking soda, and baking powder and add alternately with sour cream. Pour batter into pan spreading evenly.
- Peel and slice peaches into bite size pieces. Toss with flour, sugar and cinnamon.
- Sprinkle over top of cake batter.
- Mix oatmeal and flour with sugar and cinnamon. Cut in cold butter until it becomes the size of peas and stir in chopped nuts.
- Sprinkle over cake and bake for 40 minutes.
- Cool cake thoroughly and dust with confectioners sugar, if desired.
