Peach Cobbler

Ingredients
- 8 cups sliced peaches (peeled)
- 1⁄4 cup sugar
- 1⁄4 teaspoon ground ginger
- 1⁄4 teaspoon ground cloves
- 1⁄8 teaspoon nutmeg
- 1 teaspoon ground cinnamon
- 2 tablespoons flour
Cobbler Topping
- 1 1⁄2 cups all-purpose flour
- 1⁄3 cup sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 6 tablespoons cold butter, cut into small pieces
- 1⁄2 cup buttermilk
- 1⁄2 teaspoon vanilla
Directions
- Preheat the oven to 375°F Lightly butter an 8- X 10-inch baking dish.
- Toss sliced peeled peaches with sugar, spices and 2 tablespoons of flour. Put the fruit in the dish, then cover it with the topping. Brush the top with the beaten egg and sprinkle it with sugar for a shiny, sparkly crust. Bake until the fruit is cooked and bubbling around the edges, about 25 minutes. Let the cobbler sit for a while before serving, but serve it warm with cream, yogurt, or ice cream.
- Cobbler Topping:
- Mix the dry ingredients together, then cut in the butter using your fingers or two knives until it forms coarse crumbs. Stir in the buttermilk and vanilla with a fork until dough clings together when grabbed with your hand. If too dry, add a little more buttermilk until all the flour is moist enough to cohere. Spoon the dough over the fruit using a small spoon or your fingers to give the surface a cobbled appearance. For a smoother look, you can roll the dough and cut out biscuits or simply lay the whole sheet of dough over the fruit.
