Peach Butter

Yields: 1 1/2 cups
Ingredients
- 3 cups fresh peaches, sliced (about 4 large)
- 1⁄4 cup orange juice
- 3⁄4 cup sugar
- 2 tablespoons honey
- 1⁄2 teaspoon orange rind, grated
- 1⁄8 teaspoon ground allspice
Directions
- In a medium saucepan, combine peach slices and orange juice; bring to a boil. Cover, reduce heat, and simmer for 8 minutes or until tender, stirring occasionally.
- Place peach mixture into a blender or food processor; cover and process until smooth, stopping once to scrape down sides.
- Return peach mixture to saucepan; add sugar, honey, orange rind, and allspice. Bring to a boil; reduce heat, and simmer, uncovered for 25 minutes or until thickened, stirring occasionally.
- Spoon into jars; cover and store in the refrigerator.
