Pea Soup

A smooth and summery soup. Onion blended with frozen peas and stock and flavored with mint.

Serves: 4-6

Ingredients

  • 1  ounce butter
  • 1  large onion, roughly chopped
  • 1  tablespoon all-purpose flour
  • 1  lb  frozen peas
  • 5 14 cups  vegetable stock or 5 14 cups  chicken stock
  • 12 teaspoon  superfine sugar
  • 2  sprigs mint
  •  salt and pepper
  •  mint leaf, shredded to garnish

Directions

  1. Melt the butter in a large saucepan, add the chopped onion and cook very gently stirring occasionally for about 10 mins until soft but not colored.
  2. Sprinkle in the flour and stir for a further 1-2 mins then add the peas, stock, sugar and mint sprigs.
  3. Bring to a boil, cover and simmer gently stirring occasionally for about 5 mins or until the peas are soft. Do not simmer any longer than this or the peas will lose their fresh green color.
  4. Remove the mint sprigs and discard. Puree the soup in a blender until smooth.
  5. Return the soup to the rinsed out pan, reheat and add salt and pepper to taste.
  6. Serve hot garnished with the shredded mint.
