PB&J Quinoa Power Balls

Ingredients
- 1 1⁄2 cups quinoa, divided
- 1 cup lightly dry roasted salted peanut
- 1⁄4 cup ground flax seeds
- 2⁄3 cup dried blueberries
- 1 pinch sea salt
- 1⁄2 cup unsweetened natural-style peanut butter
- 3 tablespoons liquid honey
- 1 teaspoon vanilla extract
Directions
- In food processor, combine 1 cup quinoa flakes, peanuts and flax seeds. Pulse until finely chopped.
- Add blueberries, salt, peanut butter, honey and vanilla. Pulse until mixture forms a dough.
- Place remaining quinoa flakes in shallow dish. Form dough into 24 balls. Roll balls in quinoa flakes until evenly coated. Refrigerate for 1 hour.
