Paul's Favorite (Lightened Up) Chicken

Ingredients
- 5 slices turkey bacon, diced
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 4 ounces lean ham, diced
- 1 lb chicken breast
- 1 bell pepper, sliced thin and cut into bite size pieces
- 1 cup mushroom, diced
- 1 cup reduced-fat Mexican cheese blend
- black pepper
- crushed red pepper flakes
Directions
- Place bacon pieces, garlic and onion in large skillet over medium-high heat, fry until bacon is crisp. Drain if necessary.
- Add ham and chicken to skillet. Cook, stiring occassionally, until chicken is about half cooked.
- Add bell pepper and mushrooms and cook until veggies are tender and chicken is cooked through (no longer pink).
- Add cheese and spices and cook until everything is coated and cheese is melted.
- Serve with pasta, rice or potatoes.
