Pasta & Crab Salad

This is a new pasta salad that I created for our Memorial Day picnic. My objective was to prepare something that the grandkids would enjoy, so this sweet pasta salad evolved. Rather than make a dressing for it, I thought that Marzetti's Slaw Dressing would give it just the right balance of sweetness and tanginess. I hope you'll try it, and let me know your opinions. Serves: 16-20

Yields: 3 quarts

Ingredients

  • 4  cups elbow macaroni, al dente
  • 4  cups  peeled & diced potatoes, al dente
  • 2  cups  diced carrots, al dente
  • 6  hard-boiled eggs, chopped
  • 1  lb  imitation crabmeat, cut into bite sized pieces
  • 1 (12 ounce) jar  sweet gherkins, sliced about 1/8-inch
  • 1.5 (15 ounce) jars  marzetti's  coleslaw dressing
  • 1  teaspoon sea salt
  • 12 teaspoon fresh ground pepper

Directions

  1. Mix all ingredients together in large storage container.
  2. Refrigerate at least 4 hours prior to serving, stirring frequently.
  3. Serve in a pretty cut glass bowl.
