Pasta and Pine Nut Salad - With Gluten-Free Option

Ingredients
Salad
- 500 g spiral shaped pasta, cooked and cooled
- 1 red capsicum, seeded and chopped (bell pepper)
- 1 purple onion, chopped
- 1⁄2 cup pine nuts, toasted
- 1⁄3 cup sun-dried tomato, chopped
- 1⁄4 cup fresh basil or 1⁄4 cup fresh parsley, chopped
- 1 ear of corn, corn removed from cob (can use 1/4 cup tinned corn instead)
Dressing
- 1⁄4 cup lemon juice
- 1⁄4 cup light olive oil
- 1 tablespoon brown sugar
- salt and pepper, to taste
Directions
- Combine salad ingredients, mix well.
- In another bowl, whisk together all of the dressing ingredients.
- Toss the dressing through the salad and serve.
