Passover Low-Fat Granola

My kids look forward to this every year. They also like it on their ice cream.

Serves: 12

Ingredients

  • 3  cups  matzo farfel
  • 12 cup  shredded coconut
  • 12 cup  chopped  nuts (, your choice)
  • 14 cup  oil
  • 13 cup sugar (or other sweetener)
  • 14 teaspoon salt
  • 1  teaspoon cinnamon
  •  grated  orange rind
  • 1  cup raisins (or other chopped dried fruit)

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine farfel, coconut and nuts in a large bowl.
  3. Spread onto non-stick cookie sheet.
  4. Bake 20 minutes, tossing several times.
  5. Meanwhile, in a two-quart saucepan combine oil, sweetener and salt.
  6. Simmer, stirring constantly.
  7. Add farfel mixture.
  8. Stir until coated evenly.
  9. Add cinnamon and grated orange peel.
  10. Spread onto non-stick cookie sheet.
  11. Bake 20 minutes, stirring frequently until brown.
  12. Remove and cool.
  13. Add raisins.
  14. Break up any large chunks with a spatula.
  15. Store in closed container in the refrigerator until served.
