Passover Apple Cake

You would never know this is a Passover cake, it's so good. This is like a coffee cake.

Ingredients

  • 3  eggs, beaten well
  • 34 cup sugar
  • 13 cup  oil
  • 34 cup  matzo cake meal
  • 5  apples, peeled and sliced
  • Topping

  • 12 cup  chopped walnuts or 12 cup  chopped pecans
  • 34 cup sugar
  • 1  tablespoon cinnamon

Directions

  1. Beat eggs, sugar and oil until mixture is light colored. Add cake meal and mix well.
  2. Pour half of batter into a lightly greased 8 or 9 inch glass baking pan.
  3. Mix topping ingredients and sprinkle about half the topping mixture evenly over the batter.
  4. Pour half of the apples over the batter.
  5. Pour the rest of the batter over the apples and cover with the remaining apples.
  6. Sprinkle evenly the rest of topping over the apples.
  7. Bake at 350 degrees for 1 1/4 hours or until the sides of the cake pull away very slightly from baking pan.
  8. Cool completely and store wrapped in Saran Wrap.
