Parsnip Patties

Ingredients

  • 4  medium parsnips
  • 1  egg yolk
  •  salt and pepper
  • 1  egg white, slightly beaten
  • 1  cup  bread, crumbs
  •  butter or   oil (for frying)

Directions

  1. Chop parsnips and steam until tender. Mash thoroughly.
  2. Mix in egg yolk and salt and pepper to taste.
  3. Form into patties, dip into egg white then roll in bread crumbs.
  4. Fry in oil or butter.
