Parsleyed Rice With Peas

A simple rice side dish that pairs well with an Alfredo dish or any creamy main course.

Ingredients

  • 3  tablespoons butter, divided
  • 2  tablespoons onions, chopped
  • 1  cup rice
  • 1 12 cups water
  • 1  bay leaf
  •  salt & freshly ground black pepper
  •  hot pepper sauce
  • 1  cup  frozen peas
  • 2  tablespoons fresh parsley, chopped

Directions

  1. In a saucepan, heat butter over medium heat. Add onions and cook until wilted. Add rice and stir. Add water, bay leaf, salt, pepper, and hot sauce. Bring to a boil, cover and reduce heat to simmer. Cook 20 minutes.
  2. Meanwhile, combine peas with the remaining tablespoon of butter, salt and pepper to taste. Heat while shaking and stirring the pan so the peas cook evenly for about 1 minute.
  3. Add peas and parsley to rice; stir and serve.
