Parmesan, Spinach and Barley Casserole

Ingredients

  • 1 (32 ounce) container chicken broth
  • 1 (16 ounce) can  red beans, rinsed and drained
  • 1 (8 ounce) package mushrooms, sliced
  • 1 12 cups barley, uncooked
  • 1 12 cups onions, chopped
  • 1  teaspoon  italian seasoning, dried
  • 1  teaspoon pepper
  • 1  teaspoon salt
  • 1 (6 ounce) package  Baby Spinach
  • 3  ounces parmesan cheese, shredded

Directions

  1. Place first 9 ingredients in a 4 quart slow cooker; stir well. Cover with lid; cook on high 3 hours. Add spinach. Cover and cook 15 minutes; stir well. Sprinkle each serving with cheese.
