Parmesan, Spinach and Barley Casserole

Ingredients
- 1 (32 ounce) container chicken broth
- 1 (16 ounce) can red beans, rinsed and drained
- 1 (8 ounce) package mushrooms, sliced
- 1 1⁄2 cups barley, uncooked
- 1 1⁄2 cups onions, chopped
- 1 teaspoon italian seasoning, dried
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 (6 ounce) package Baby Spinach
- 3 ounces parmesan cheese, shredded
Directions
- Place first 9 ingredients in a 4 quart slow cooker; stir well. Cover with lid; cook on high 3 hours. Add spinach. Cover and cook 15 minutes; stir well. Sprinkle each serving with cheese.
