Parmesan Spinach

Ingredients
- 1 1⁄2 tablespoons unsalted butter
- 1⁄2 onion, minced
- 1 1⁄2 tablespoons flour
- 1 1⁄2 cups milk
- 2 (10 ounce) packages frozen spinach, thawed and liquid squeezed out
- 3⁄4 cup parmesan cheese, grated
- 1⁄2 teaspoon lemon peel, grated
- 1⁄4 teaspoon nutmeg, freshly grated
Directions
- In a medium saucepan, melt butter over medium heat; add onions and cook until softened, about 5 minutes.
- Add flour and stir for 1 minute; remove from heat and gradually whisk in the milk.
- Return to a simmer until slightly thickened, 2 minutes.
- Stir in spinach, 1/4 cup water, 1/2 cup Parmesan cheese, lemon peel, and nutmeg; cook until sauce is thick and spinach is tender, 10 minutes.
- Thin with additional water, if necessary, stir in remaining Parmesan, and season with salt, if necessary.
