Ingredients
- 1 lb potato
- 1 tablespoon olive oil
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon fresh ground black pepper
- 2 tablespoons grated parmesan cheese
Directions
- Dice potatoes.
- Combine potatoes, oil, salt and pepper in a 13x9 inch baking dish.
- Sprinkle with parmesan cheese.
- Cover dish with foil.
- Bake at 425 30 minutes, or until potatoes are tender.
