Parmesan Quinoa Omelet

Ingredients
- 3 large egg whites
- 1 large egg
- 1 pinch sea salt
- 1⁄3 cup cooked quinoa, cooled
- 1 tablespoon minced fresh chives or 1 tablespoon green onion
- 2 tablespoons olive oil
- 2 grated parmesan cheese
- cooking spray
Directions
- In small bowl, beat egg whites, egg, and salt until blended. Stir in quinoa and chives.
- In small skillet, heat oil. Pour in eggs and sprinkle with cheese. Cook 2-4 minutes, until eggs are set.
