Parmesan-Pecan Rice

An easy side that would go with most anything.

  1. In a medium saucepan over medium heat, melt the butter.
  2. Add in rice; stir for 1 minute.
  3. Add in broth, salt, and pepper; bring to a boil.
  4. Decrease heat to med-low and cook, covered, about 20 minutes, until rice is tender.
  5. Stir in Parmesan, pecans, and parsley; fluff with a fork before serving.
