Pariserwafier (Swedish Creme Wafer)

A traditional cookie perfect for the holidays. Put a star of frosting on top of cookie to decorate.

Yields: 1 batch cookies

Ingredients

  • Cookie

  • 1  cup butter, softened
  • 2  cups flour
  • 13 cup  whipping cream
  • Filling

  • 14 cup butter
  • 34 cup powdered sugar
  • 1  egg yolk
  • 1  teaspoon vanilla
  • 1  drop  red food coloring

Directions

  1. Mix cookie ingredients together, chill dough.
  2. Roll dough 1/8-inch thick.
  3. Cut out 1 1/2 inch circles.
  4. Transfer to sugar covered wax paper.
  5. Coat both sides.
  6. Prick cookies with a fork.
  7. Bake on ungreased cookie sheet 7 to 9 minutes at 350 degrees.
  8. Mix together ingredients for filling during this time, and when cookies are cooled place filling between 2 cookies.
