Papi's Ensalada De Nopales (Cactus Salad)

Another of DH's recipes; I am trying to get them posted so I will have as reference to his faves, as I sometimes forget ingredients or amounts. Again, we rarely measure, so feel free to adjust. Nopalitos are jarred sliced cactus, found in the Mexican food aisle.

Ingredients

• 6  roma tomatoes, seeded and diced
• 1  large onion, diced
• 1⁄4 cup cilantro, chopped
• 2  jalapenos, minced
• 1 (16 ounce) jar nopalitos, rinsed well and chopped
• 2  limes, juice of
•  salt

Directions

1. Combine all the ingredients in a medium bowl. If you like less heat, remove the membranes and seeds from chiles, I usually leave them when using jalapeños - they're pretty mild for DH.
2. I serve with tortilla chips.
