Papayas and Rum

This is the easiest dessert to make (and tastes excellent in the spring and summer months) - you can make it in the time that you're clearing the table from the main course and the guests are letting their food digest. HOWEVER, as there is rum in it, I would not give it to young children, but it is up to the server. **The amounts listed in the recipe are approximate - you can adjust them as you like to your preference for sweetness and rum-flavour. Ingredients

  • 2  whole ripe papayas, at room temperature
  • 2 -3  tablespoons brown sugar
  • 14 cup  bacardi rum

Directions

  1. Peel and cube the papayas into bite-size pieces.
  2. Sprinkle with the sugar and mix together gently.
  3. Add the rum.
  4. Mix together and let sit for about five minutes to absorb the flavour.
  5. Serve or let sit in the refrigerator for later.
