Panko-Crusted Fish

Emeril used this for cod sandwiches on his show but I have used it for walleye and mahimahi also.

Serves: 6

Ingredients

  • 12 cup  vegetable oil
  • 1 12 lbs  fish fillets
  • 4  teaspoons  Emeril's Original Essence (creole spice)
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 34 cup flour
  • 2  large eggs
  • 6  tablespoons milk
  • 1 12 cups  breadcrumbs (panko or other)

Directions

  1. Heat oil in large skillet over medium heat.
  2. Season fish with essence.
  3. Salt and pepper.
  4. Put flour in shallow dish. Set aside.
  5. Add eggs to milk in bowl and whisk to combine. Set aside.
  6. Place bread crumbs in 3rd shallow dish.
  7. Dredge each fillet in flour, shake off excess, coat in egg wash, press into crumbs coating evenly.
  8. Fry fish in hot oil until golden brown; about 2-3 minutes on first side and 1-2 minutes on second side.
