Pancakes for Baby

Yields: 20 small-med pancakes
Ingredients
- 2⁄3 cup fortified baby food oatmeal (you can play with amounts you use)
- 1 cup all-purpose flour or 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 3 eggs
- 1 -2 cup coconut milk
- 1 ripe banana
- 1 cup steamed carrot
- 1 tablespoon blackstrap molasses
- 1 tablespoon olive oil
- 1⁄4 teaspoon cinnamon
Directions
- Place cooled carrots, bananas, milk, eggs, oil, and molasses in food processor and blend until carrots are finely cut up and mixture is foamy.
- In a large mixing bowl, stir together flours, salt, cinnamon and baking powder.
- Stir wet mixture into flour, mixing until just barely combined. Add milk if needed to make batter fairly thin.
- Ladle ~ 2 T amounts onto electric griddle or pan and cook approx 4 min on each side.
