Pancakes

Yields: 9 4 inch pancakes
Ingredients
- 1 egg
- 1 cup all-purpose flour (If using self rising flour, omit baking powder and salt.)
- 3⁄4 cup milk
- 2 tablespoons vegetable oil
- 1 tablespoon white sugar
- 3 teaspoons baking powder
- 1⁄2 teaspoon salt
Directions
- Beat egg with hand beater until fluffy.
- Beat in remaining ingredients just until smooth.
- For thinner pancakes, stir in an additional 1/4 c milk.
- Grease heated griddle (To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.).
- Pour about 3 tbsp batter from tip of large spoon or from pitcher onto hot griddle.
- Cook pancakes until puffed and dry around edges.
- Turn and cook other side until golden brown.
