Pancakes

Yields: 9-14 pancakes
Ingredients
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon salt
- 3 tablespoons white sugar
- 1 3⁄4 teaspoons double-acting baking powder
- 1 -2 slightly beaten egg
- 3 tablespoons vegetable oil
- 1 -1 1⁄4 cup milk
Directions
- Stir dry ingredients in mixing bowl.
- Mix the liquid ingredients quickly into the dry ingredients. (Stir to incorporate, do not beat, a little lumpy is okay.).
- Let bubbles form on top.
- Cook on preheated griddle/frying pan with a little oil in the pan on medium heat.
- After bubbles form on top, turn once.
- (Add fruit of your choice i.e. blueberries, strawberries, bananas, or chocolate chips mmmmm).
