Pan-Fried Squash

This squash is unlike any other squash before, It has plenty of flavor, and is coated with cornmeal instead of flour. Show more

Serves: 3-4

Yields: 24 slices

Ingredients

  • 1  lb  yellow squash
  • 1  cup  vegetable oil
  • 1 12 cups cornmeal
  •  salt, to taste
  •  pepper, to taste

Directions

  1. Slice the squash about a 1/4 an inch thick.
  2. Preaheat oil in a frying pan.
  3. Season the squash slices with salt and pepper.
  4. Coat the squash slices with cornmeal.
  5. Fry squash about two minutes per side, or until slighty brown.
  6. Let cool and enjoy.
