Pam's Roasted Vegetables

I had these at my niece's house last week and they were delicious. I am definitely planning on making them. I'm sure you could substitute any veggie you like but this was a great combination. Show more

  1. Cut asparagus, zucchini and red pepper into pieces or chunks.
  2. Leave the tomatoes whole.
  3. Place in a small roasting pan.
  4. Sprinkle with coarse salt or sea salt.
  5. Combine oil, garlic and basil and drizzle over vegetables.
  6. Bake at 375°F for 20-25 minutes or until asparagus is cooked.
  7. If you can't find grape tomatoes, just use an extra pint of the cherry tomatoes.
