Paleo Pumpkin Pancakes

These are a very simple and quick grain free "paleo" pancake. You can also add all ingredients into a blender and blend to mix them up. Then just pour them onto a hot griddle or skillet. We double the recipe when we make them. Show more

  1. Whisk the eggs, canned pumpkin, pure vanilla extract, and pure maple syrup together. Sift the pumpkin pie spice, cinnamon, and baking soda into wet ingredients.
  2. Heat and grease a skillet or griddle and spoon on batter to make pancakes of your desired size. When a few bubbles appear, flip the pancakes once to finish cooking.
  3. Serve with grass fed butter and cinnamon.
