Pain De Volaille Meatloaf

Ingredients
LOAF
- 2 lbs ground turkey
- 1⁄2 cup breadcrumbs
- 1 egg
- 1⁄8 cup adobo seasoning
- 1⁄4 cup fresh cilantro
- 1⁄4 cup onion, finely chopped
- 1⁄4 cup green pepper, finely chopped
- 1 tablespoon black pepper
- 1⁄2 tablespoon cumin
- 2 tablespoons lime juice
- 1⁄2 tablespoon sage
SAUCE
- 1 teaspoon turmeric
- 1⁄4 cup onion, finely chopped
- 1⁄2 cup dry white wine
- 2 tablespoons heavy cream
- 8 tablespoons butter
- 2 teaspoons lemon juice
- 1 pinch salt
- 1 pinch pepper
Directions
- Preheat oven to 350°F.
- Combine all ingredients for the loaf in a large bowl. Knead using hands.
- Place meatloaf mixture in bread pan and bake in oven for 1 hour or until done.
- In a saucepan combine onions and white wine. Bring to a boil and reduce by half.
- Add tumeric and cream. Reduce to medium heat.
- Wisk in the the butter a little at a time; adding the next piece before the prior has completely melted. Do not allow mixture to boil. Stir constantly.
- Add fresh lemon juice and salt and pepper to taste.
- Pour sauce over meatloaf and serve.
