Pai Ika/ Cook Islands Fish Fingers

Great served cold for school lunches.

Serves: 2-4

Ingredients

  • 2  cups  cooked  fish, cold
  • 1  cup sweet potatoes or 1  cup kumara, cold and mashed
  • 1  egg
  • 1  cup  of left over  vegetables, chopped finely
  •  salt and pepper
  •  breadcrumbs

Directions

  1. Combine everything in a bowl and mash well with a fork.
  2. Take spoonfuls of the mixture and roll into finger shapes.
  3. Roll in breadcrumbs.
  4. Fry in a little oil until golden brown.
  5. Remove from pan and set aside to cool.
  6. Store in the fridge.
