Pacific Salmon Cakes

Ingredients
- 1 lb salmon fillet
- 1 teaspoon olive oil
- 1⁄3 cup finely diced onion
- 2 tablespoons corn
- 1 tablespoon thinly sliced green onion
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon black pepper
- 2 tablespoons fine cornmeal
- 1 tablespoon butter
Directions
- Coat salmon with oil and bake at 375 for 20 minutes. Cool to the touch and flake salmon.
- In a bowl, combine salmon, onion, corn, green onions, salt and pepper. Form into 12 patties. Lightly coat both sides with cornmeal. Refrigerate for at least 1 hour before serving.
- In a skillet, melt butter over medium and fry cakes until golden, 2-3 minutes per side.
