  1. Marinate beef in egg white, oyster sauce, sherry, cornstarch, soy sauce and sugar for 1 hour.
  2. Heat oil in frying pan until hot.
  3. Stir-fry green onions and ginger 1 minute.
  4. Add beef; stir-fry 4 minutes.
  5. Serve hot.
