Over the Top Burgers

Ingredients
CARAMELIZED ONIONS
- 2 tablespoons olive oil
- 1 -2 medium yellow onion, peeled and sliced thin
- salt & pepper, to taste
SAUTEED MUSHROOMS
- 1 lb thickly sliced mushroom
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leave
- 1 fresh lemon, juice of (2 squeezes)
- 3⁄4 cup brandy
BURGERS
- 2 lbs ground beef brisket
- salt and pepper
- 4 ounces gorgonzola
- 1 avocado, mashed
- 4 slices of ripe tomatoes
- hamburger bun with sesame seeds
- catsup
- mustard
- mayonnaise or horseradish mayonnaise
- pickle
- pimento cheese
- sharp cheddar cheese
Directions
- CARAMELIZED ONIONS:
- In a large skillet, over medium heat, warm the olive oil.
- Saute the onions, salt & pepper , stirring occasionally until they are very soft and brown. (15-20 minutes).
- SAUTEED MUSHROOMS:
- In a large skillet, over medium heat, warm the olive oil.
- Saute the mushrooms, minced garlic, fresh thyme leaves, brandy, salt & pepper, for 8 to 10 minutes.
- Add 2 squeezes of lemon juice when they are finished.
- Mash the avocado, to make it spreadable.
- BURGERS:
- Over a grill or in skillet, cook the burgers to your liking.
- Put one ounce of gorgonzola on top of each burger and let it melt slightly.
- On the bottom side of the bun, spread the avocado.
- Season with salt and pepper.
- Place the burger and gorgonzola on top.
- Mound lots of onions & mushrooms on top.
- Put the upper half of the bun on top.
- Enjoy!
