Oven Roasted Caraway Potatoes

I needed another fried potato recipe and, with the help of a fig tree in Texas, came up with this one.

• Serves: 4

Ingredients

• 4  potatoes, peeled cut into 3 inch squares
• 1  shallot, diced
• 1⁄4 cup bacon grease
• 1  dash salt
• 1  dash pepper
• 1  tablespoon caraway seed, ground into powder
• 2  teaspoons paprika

Directions

1. Coat potatoes and shallots with warmed bacon grease in a bowl.
2. Put potatoes on a baking sheet.
3. Season with salt, pepper, caraway, and paprika.
4. Stir around to coat.
5. Bake uncovered for 30 minutes, stirring every so often.
