Oven-Fried Fish

For those (like me) who don't like to deep fry, these are a tasty alternative.

Serves: 4

Ingredients

  • 34 cup  corn flake crumbs
  • 14 cup  grated parmesan cheese
  • 12 teaspoon  ground red pepper
  • 14 teaspoon salt
  • 14 teaspoon ground black pepper
  • 1 12 lbs  fish fillets
  • 2  eggs, slightly beaten

Directions

  1. Preheat oven to 500F degrees.
  2. Spray cookie sheet with non-stick spray- set aside.
  3. Combine corn flake crumbs, cheese, red pepper, salt& black pepper in a shallow dish.
  4. Dip fish fillets in beaten egg, then dredge in crumb mixture.
  5. Place coated fillets on prepared baking sheet.
  6. Bake 8 minutes or until fish flakes easily with a fork.
