Outstanding Oatmeal Cookie (The Olympic Cookie)

This was published in a magazine in the early 1980's. It was a popular dessert on the menu at the Olympic Training Center in Colorado Springs. It's a good source of fiber and a great source of quick energy. It does pack some calories (97 per cookie), so be on guard. Show more

  1. Beat together butter and sugar until light and fluffy; blend in egg and vanilla.
  2. Add combined oats, flour, soda and salt; mix well.
  3. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls onto cookie sheets covered with parchment paper about 3 inches apart.
  4. Press 2 to 3 additional M&M candies into each cookie, if desired.
  5. Bake at 350*F for 8 to 10 minutes or until golden brown. Cool on cookie sheet about 3 minutes; remove cookies to wire rack to cool thoroughly.
  6. Makes about 4 dozen 2 1/2-inch cookies.
