Orzo With Parmesan and Basil

Ingredients
- 3 tablespoons butter
- 1 1⁄2 cups orzo pasta
- 3 cups chicken broth
- 1⁄2 cup parmesan cheese
- 6 tablespoons basil, chopped (or 1-1/2 tsp dried)
- salt
- fresh ground pepper
Directions
- Melt butter in skillet over medium high heat. Add orzo and saute 2 minutes, until slightly brown.
- Add broth and bring to a boil. reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in parmesan and basil. Season with salt and pepper.
- Variation: for a creamier pasta dish, add 2 T plain yogurt or whipping cream to the dish.
