Orzo Chickpea Salad

Serves: 4-6
Ingredients
- 1 cup dry orzo pasta
- 1 (15 ounce) can chickpeas
- 1⁄4 cup goat cheese
- 2 teaspoons grated lemon rind
- 2 tablespoons lemon juice
- 4 tablespoons olive oil
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh chives, chopped
- salt and pepper
- 1 garlic clove, minced
- 1 teaspoon Dijon mustard
Directions
- Cook orzo until tender.
- Drain chickpeas.
- In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo.
- Crumble in the goats cheese.
- Let rest for 15 minutes before serving. May be served warm or room temperature.
