Orzo Chickpea Salad

Lovely easy salad for summer bbqs. Feel free to add to the salad to suit your tastes, it is easily adaptable. Show more

  1. Cook orzo until tender.
  2. Drain chickpeas.
  3. In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo.
  4. Crumble in the goats cheese.
  5. Let rest for 15 minutes before serving. May be served warm or room temperature.
