Orange Walnut Conserve

- Finely grate orange peel and set aside. Remove remaining pith and
- discard. Chp flesh and discard seeds.
- In a large saucepan cook orange flesh and water over low heat for 30
- minutes. Remove from heat. Measure 5 cups pulp. Add water if necessary
- to make correct measure.
- Prepare jars, lids and bands.
- In a large saucepan cook pulp, reserved peel, raisins and sugar over low heat.
- Stir until sugar dissolves. Increase heat and bring to a rapid
- boil.
- Boil hard for 20 minutes. Stir in walnuts and bring to a boil again.
- Ladle into prepared jars leaving a 1/4" headspace. Process jars for 10 minutes in a boiling water bath. Adjust time according to your altitude.
