  1. Finely grate orange peel and set aside. Remove remaining pith and
  2. discard. Chp flesh and discard seeds.
  3. In a large saucepan cook orange flesh and water over low heat for 30
  4. minutes. Remove from heat. Measure 5 cups pulp. Add water if necessary
  5. to make correct measure.
  6. Prepare jars, lids and bands.
  7. In a large saucepan cook pulp, reserved peel, raisins and sugar over low heat.
  8. Stir until sugar dissolves. Increase heat and bring to a rapid
  9. boil.
  10. Boil hard for 20 minutes. Stir in walnuts and bring to a boil again.
  11. Ladle into prepared jars leaving a 1/4" headspace. Process jars for 10 minutes in a boiling water bath. Adjust time according to your altitude.
