Orange Tea Muffins

Yields: 36 small muffins

Ingredients

  • 1 12 cups sugar, divided
  • 14 cup  orange juice, fresh
  • 12 cup butter, softened
  • 34 cup sour cream
  • 2  cups flour
  • 1  teaspoon baking soda
  • 1  teaspoon salt
  • 1  teaspoon  orange rind, grated
  • 12 cup raisins
  • 12 cup  chopped  nuts

Directions

  1. Combine 1/2 cup sugar and orange juice; set aside.
  2. Cream butter and remaining sugar; blend in sour cream.
  3. Combine dry ingredients and add to creamed mixture.
  4. Beat on low just until ingredients are combined.
  5. Stir in orange peel, raisins and nuts.
  6. Spoon batter into greased 1 3/4-inch muffin cups, filling completely full.
  7. Bake at 375 degrees for about 12 minutes.
  8. While still warm, dip each muffin in reserved sugar/orange juice mixture.
