Orange Scented Squash Soup

Ingredients
- 1 1⁄2 cups water
- 1⁄2 cup orange juice
- 3⁄4 cup chopped onion
- 3 lbs winter squash, peeled seeded and cubed
- 1 large cooking apple, peeled and cubed
- 1 strip orange zest
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon ground nutmeg
- 1⁄4 teaspoon ground cloves
- 1 1⁄2 cups milk
- 2 tablespoons cornstarch
- salt and pepper
- 6 thin slices oranges
- snipped chives (to garnish)
Directions
- Combine all ingredients except milk, cornstarch, salt and pepper, orange slices and chives in slow cooker; cover and cook on high for 3-4 hours, adding 1 cup milk during last 30 minutes.
- Stir in remaining milk and cornstarch, stirring for 2-3 minutes; discard orange zest.
- Process soup in food processor or blender until smooth; season to taste with salt and pepper.
- Serve garnished with orange slices and chives.
